Pesto and ZA’ATAR breakfast eggs

INGREDIENTS

  •   2 eggs

  • 1 tbsp of pesto alla Genovese

  •   80 g of spinach

  • 80 g of cavolo nero or kale

  • 1 tsp of za’atar spice mix

  • Salt and pepper

DIRECTIONS

In an anti- adherent pan add 1 tbsp of pesto and let it heat for 1 minute.

When the oil of the pesto is hot add the spinach and the cavolo nero and let it cook for 3-5 minutes.

When the veggies are wilted make 2 holes in the pan and crack the 2 eggs in the holes, adjust of salt and pepper and add the za’atar spice to it and cook until the eggs are done.

Optional : you can enjoy the eggs with a slice of bread or you can add a bowl of fruit of choice on the side, crumble some feta cheese and add some basil leaves.
